2 tbsp ghee, 2 tbsp each of cashew, raisins, almond, 1 bay leaf, 4 cloves, 1 cinnamon, ½  tsp each of jeera, red chilli powder, garam masala, 1 chopped onion,carrot, potato, 2 tbsp peas, ½ tsp ginger garlic paste, ¼ tsp turmeric, ¾ tbsp salt, 2 tbsp saffron milk, 2 tbsp each of chopped coriander, mint, 1tsp lemon juice, 3 cup boiled rice


1.Take a pan heat ghee and roast nuts until golden brown. Keep aside.

2.In the same ghee, add bay leaf, cinnamon, cloves, cardamom and jeera saute on low flame until it turns aromatic

3.Now add onion and ginger garlic paste and saute for a while.

4.Add all the vegetables and cook for 2 minutes, add all powdered spices. Saute on low flame.

5.Add saffron milk, 3 cup cooked rice and salt, mix well. Cover and simmer for 3 minutes until flavours are well absorbed. Add lemon juice and mix gently.

6.Garnish with fried nuts, coriander and mint.

Finally, Shahi Pulao is ready to be served.
